This bean salad is the reason I can tolerate rosemary

I normally cannot stand rosemary, cilantro or thyme.

I have been attempting to make myself like cilantro, I am slowly getting used to it and it has only taken about 5 years.  My sister in law mixes Tostitos salsa (specifically the Costco brand, she and my brother in law are convinced it is superior to others and I agree after trying it) chopped mango, diced onions and chopped cilantro. It’s delicious!

My mom makes a great bean salad with fresh rosemary.  I think fresh and not dried makes a huge difference. I have no clue where she got it from but here is what she sent me.

1 can white kidney beans
1 can red kidney beans
1 can chic peas
2 celery stalks chopped fine
1/2 red onion chopped fine
1 cup fresh flat leaf parsley
1 table spoon of fresh rosemary
rinse the beans and combine all above in a large bowl

combine in a smaller bowl:
1/3 cup apple cider vinegar
1/3 cup sugar
1/4 cup olive oil
1 1/2 tsp salt
1/4 tsp black pepper
mix the vinaigrette with the beans/veggies and let marinate for a couple of hours.

I still can’t stand thyme though, that stuff is the worst!
